Gnocchi with goats cheese and pesto.
- half an onion
- 1-2 cloves of garlic
- 150-200g of gnocchi per person
- 250g of goats cheese
- 1-2 teaspoons of pesto
Fill a saucepan with cold water and put on to boil.
While that’s heating up dice the onion and crush the garlic, sautee it off with a little oil or butter in a large frying pan.
Add the pesto and turn down the heat to low.
Chop the cheese and add to the pan, move it around. If it feels too stiff water it down with a little milk but not too much, it should be the consitency of thick cream.
When the water is on a rolling boil pour in the gnocchi. This will tak 4-5 minutes but it’s best done by eye. Once the gnocchi is floating on the surface it’s done.
Drain the gnocchi but hold back a little of the water it was cooked in.
Pour the drained gnocchi into the frying pan so that everything is coated. If the sauce is looking too thick add some of the water from the pan.
Season to taste and serve with salad.
Time to cook - 20 minutes.
You can also change the sauce - soften onions & garlic, add peppers, carrots, courgettes, a tin of tomatoes, salt & pepper. Add a little balsamic or red wine vineger.

2 cups heavy cream
4 teaspoons loose chocolate chai (available at gourmet retailers and online on Amazon.com)
2 cups finely chopped dark or semisweet chocolate
